Peser et mesurer
les ingrédients

 

Eplucher les échalotes puis les  ciseler

Réunir dans une russe :  poivre du moulin, échalotes ciselées, vin blanc et vinaigre blanc puis porter à ébullition

Laisser réduire de 4/5 ème

 

Ajouter le fonds de veau lié à la réduction
Laisser cuire à petit feu pendant 10 minutes

 

Dépouiller si nécessaire

Passer la sauce au chinois ou à la passoire fine
sans la fouler puis la faire rebouillir un instant

 

Vérifier l'assaisonnement et la consistance de sauce

Monter la sauce au beurre, ne plus la faire bouillir

 

Tamponner puis réserver la sauce au bain-marie
